2/12/2024 SOBA-MAE Japense soba noodle making workshop & sake tasting

Sobamae is the mindful practice in Japan to enjoy sake before eating soba noodles. In this event we will share the spirit of Sobamae to enjoy sake tasting followed by an immersive soba making demonstration by soba master Takashi Fujita, the owner chef at Fujino from Osaka, Japan. There will be 2 workshops scheduled.

In collaboration with Megimi’s Supper Club and catering, we are hosting another sake & deli delivery event “Megumi & Natsuki Yokocho” on Fri. 20th November

Yokocho means hidden alleyways one step behind main streets, where you can find hundreds of tiny eateries, casual bars and izakaya packed next to each other in narrow lanes. There are Yokocho in all over Japan and it is a great destination to drink and eat like locals.

At Megumi & Natsuki Yokocho, we want to bring relaxing and fun dining experience by delivering fine sake selected by Natsuki and Japanese deli / tapas dishes made by Megumi.

All participants will meet on Zoom on scheduled date and time, enjoy same sake and dishes together, sharing sake tips and recipes as well as enjoying each other. We may have some very special guest joining on the talk.

This time we are featuring Tsuchida Sake Brewery in Gunma Prefecture.

Date: Fri. 20th November

About TSUCHIDA SAKE BREWERY…

Tsuchida Sake Brewery is located in Kawaba, a small village in Gunma, a mountainous region northwest of Tokyo. Established in 1907, it has been a family operation for six generations. The brewery strives to create a parallel world of tradition and evolution, using ancient secret methods to brew sake, with the application of modern approaches.

Their sake is low intervention, spontaneous and unprocessed, incorporating local unpolished rice and micro-organisms such as Japan’s proud koji, natural lactic acid bacteria and ambient yeast residing in the sacred family brewery. Their sake is made in a way to enhance the flavours over the passage of time.

With a history spanning over 2,000 years, now is a really exciting time to be discovering sake. WSET School London Sake Educator and Sake Samurai Natsuki Kikuya has been running a series of fascinating sake webinars for us since the start of lockdown in the UK, and her next one focuses on a particularly important rice variety. 

Today there are over 120 different sake rice varieties grown all around Japan, but you cannot start learning about them without mentioning Yamadanishiki, known as "the king of sake rice". In this webinar, Natsuki will explore the history and stories behind the popularity of Yamadanishiki. She'll also discuss how microclimate and regionality factors affect the quality of rice itself in Hyogo Prefecture and other areas of Japan.

Very excited to announce this special opportunity to hold virtual tour of Niizawa Sake Brewery in Miyagi Prefecture, Japan

Thursday, 18th June at 7PM via Zoom

The virtual tour includes 2 types of their special sake labels from the brewery:

  • Atago no Matsu, Special Honjozo

  • Atago no Sakura, Junmai Daiginjo

Participants will receive Zoom access to visit their brewery virtually on scheduled date, and attend the tour guided by Niizawa’s vice-Toji Sam Callon.

We will also have the 5th generation president Niizawa himself leading us Kiki-zake (sake tasting) masterclass afterwards using the sake.

About Niizawa Brewery:

Founded in 1873, Niizawa Sake Brewery was founded originally in Osaki-city of Miyagi producing their classic brand “Atago no Matsu” which was loved by the famous Japanese poet Bansui Doi.

In 2000, their 5th generation owner of the brewery Mr. Iwao Niizawa took over the business when the company was suffering from the accumulating debt from failing to adapt to change in the times. He had achieved to win the Kikizake (sake tasting) competition in the age of 20, and became the company’s Toji, master brewer in the age of 24. In 2002 Hakurakusei brand was his creation to add to their portfolio, expressing minimality by subtracting perfumery aromas and reducing much sugar level, in spite of the trend in sake industry at that time. Even though most consumer didn’t pay attention to his sake at first, gradually Michelin star chefs and sommeliers started to favour his sake, as it is ultimate sake to invite foods. Hakurakusei sake was chosen to be served at the international flight at Japan Airline Excestive Class in 2005.

Even though the 2011 Tōhoku earthquake destroyed his brewery, they had managed to find the new brewery location in Kawasaki-city, 80km away from the original site with great water source from Mt. Zao.

This year celebrates their 9th year producing their sake at the new site with a wonderful team of young and passionate brewers which more than half of are woman unusually.

We will be very excited to introduce Niizawa Brewery and their team on the tour day!
